Kodiak-Sheet-Pan-Pancakes

So quick to mix up, taste great, and last us most of the week.

I love to prep these on a weekend to make weekday mornings on the go a little more smooth.

My kids top their pancake with a little drizzle of maple syrup and I like to top mine with Greek yogurt or a little peanut butter and additional fruit.

These pancakes help us start our morning with a source of carbohydrate, protein, and fiber - filling our bellies and giving us lasting energy for the morning. Enjoy!

Kodiak Sheet Pan Pancakes

Time: 15 minutes | Makes one 15X10 inch sheet pan

INGREDIENTS

2 ½ cups Kodiak pancake/waffle mix

¾ cup plain Greek yogurt (I like to use full fat)

1 ½ cup milk (I use 2% milk)

2 eggs

`2 tbsp. canola oil

1 tbsp. pure maple syrup

1 tsp. vanilla bean paste or vanilla extract

Toppings: Mini chocolate chips, fruit of choice (we use blueberries and raspberries)

INSTRUCTIONS

  1. Preheat oven to 375 degrees.

  2. Mix all wet ingredients together until combined.

  3. Add in dry Kodiak pancake/waffle mix.

  4. Stir just until combined.

  5. Spray jelly roll pan (about 15×10 inches) with nonstick cooking spray.

  6. Pour pancake mix into pan.

  7. Top with desired toppings.

  8. Bake for 12-15 minutes and enjoy!
