Homemade Granola

Prep time: 20 minutes

INGREDIENTS

  • 3 ½ cups rolled oats

  • 1 cup slivered almonds

  • 1/3 cup sunflower seeds

  • 1 tbsp. chia seeds

  • 1/3 cup chopped pecans

  • ½ cup coconut flakes, unsweetened (optional)

  • 1 tsp. ground cinnamon

  • ½ cup honey

  • 2 tbsp. olive oil

  • Pinch of salt

  • 1 egg white, whisked until frothy

INSTRUCTIONS

  1. Line a large cookie sheet with parchment paper.

  2. Combine rolled oats, slivered almonds, sunflower seeds, chopped pecans, chia seeds, coconut flakes (optional), and cinnamon in a bowl and stir to blend evenly.

  3. Combine honey, olive oil, and salt in another bowl and whisk to blend evenly. You can warm it up slightly if you find it is too thick. Pour it into the bowl with the oats and toss it all together so the oats are coated evenly.

  4. Whisk the egg white in a small bowl with a fork or a small whisk until frothy. Add it to the granola and stir to combine and distribute it evenly. Turn the granola mixture out onto the prepared baking sheet and spread it in an even layer. Pack it down so it is compact.

  5. Put it in a cold oven. Turn the oven on to 325 degrees Fahrenheit. Once the oven reaches temperature, set a timer for 30 minutes, rotating the pan halfway, until granola is evenly browned and feels dry to the touch. If you feel like it is getting too dark, take it out of the oven and use a large spatula to flip large portions of the granola in the pan.

  6. One done cooking, let your granola cool and place it into a container. This will keep for about 3 weeks at room temperature in an air tight container. Enjoy!
